Granola Cereals

  • 1/4 cup [60 mL] honey
  • 3 tablespoons [45 mL] apple juice concentrate
  • 1 tablespoons [15 mL] molasses
  • 1/4 teaspoon [1 mL] cinnamon
  • 1/4 teaspoon [1 mL] allspice
  • Grated ring of 1 lemon
  • 2 tablespoons [30 mL] melted butter
  • 2 1/4 cups [560 mL] rolled oats
  • 3/4 cup [190 mL] chopped walnuts
  • 1/4 cup [60 mL] wheat germ
  • 1/4 cup [60 mL] raisins
  • Combine honey, apple juice concentrate, butter, molasses, cinnamon, allspice and lemon rind.
  • Microwave on 'HIGH', uncovered, for 75 seconds.
  • Stir in melted butter.
  • Add rolled oats, walnuts and wheat germ; stir and microwave, on 'HIGH', for 5 minutes
  • Line a 13 x 9 x 2-inch [33 x 23 x 5 cm] pan with a double layer of paper toweling.
  • Evenly spread mixture and cover with paper toweling.
  • Microwave at 50% for 5 minutes, stirring once.
  • Leave to cool completely before stirring in raisins.
  • Store into an airtight container.
