Creamy Celery Soup
Comments: For a richer soup, use 1/2 cup [125 mL] milk and 1/2 cup [125 mL] cream.
It is also possible to mix in 1 egg yolk, beaten with a little of the hot soup before adding to the remaining soup.
For a fine herbs soup, also mix in 3/4 teaspoon [3.75 mL] mixed fine herbs, 2 bay leaves and 3/4 cup [190 mL] freshly chopped parsley.

  • 1 cup [250 mL] boiling water
  • 1 1/2 cups [375 mL] tiny celery dices
  • 1/3 cup [80 mL] minced onion
  • 2 tablespoons [30 g] butter
  • 2 tablespoons [17.5 g] flour
  • 1/2 teaspoon [2.5 mL] salt, more if needed
  • Pinch of white pepper, more if needed
  • 3 cups [750 mL] milk
  • A little butter [optional]
  • Freshly chopped parsley [optional]
  • Cook together celery dices and minced onion in boiling water until soft, for appproximately 15 minutes.
  • Meanwhile, melt butter into a casserole over low heat.
  • Stri in flour, salt and white pepper.
  • Pour in milk, stirring.
  • Cook over medium-high heat stirring until thickening and bubbling.
  • Mix in celery mixture.
  • Cook until really hot; check for seasonings.
  • Serve, topped with a little butter and/or freshly chopped parsley if desired.
