Cold Creamy Carrot Orange Soup

  • 1 cup [250 mL] carrot juice
  • 1 1/4 cups [300 mL] light [10 to 12%] cream
  • 4 egg yolks
  • 1/2 cup [125 mL] freshly squeezed orange juice
  • 20 ice cubes
  • Orange slices, to decorate
  • Straws
  • Pour carrot juice and cream into a shaker.
  • Shake vigorously.
  • Evenly add ice cubes to tall glasses.
  • Evenly fill glasses with carrot juice mixture.
  • Decorate each glass with orange slices.
  • Serve immediately, with straws.
