Vegetable Broth

  • 2 carrots, peeled then chopped
  • 1 parsnip, peeled then chopped
  • 2 onions, peeled then chopped
  • 6 stalks celery, choppebd
  • 4 bay leaves
  • 1 bunch fresh parsley sprigs
  • 2 teaspoons [10 mL] black peppercorns
  • 12 cups [3 L] water
  • Transfer all ingredients into a large casserole.
  • Bring to a boil then leave to simmer, uncovered for 90 minutes.
  • Strain through a fine sieve.
