Ground Beef Vegetable Soup

  • 1 pound [454 g] ground beef
  • 1 cup [250 mL] chopped onion
  • 1 cup [250 mL] potato dices
  • 1 cup [250 mL] carrot slices
  • 2 [16-ounce / 454-mL each] cans tomatoes
  • 1 cup [250 mL] celery slices
  • 1/4 cup [60 mL] rice grains
  • 3 cups [750 mL] water
  • 4 teaspoons [20 mL] salt
  • 1/4 teaspoon [1 mL] basil
  • 1/4 teaspoon [1 mL] thyme
  • 1 bay leaf
  • Into a large casserole, stirring, brown together ground beef and chopped onion; drain melted fat.
  • Then mix in all remaining ingredients; bring mixture to a boil.
  • Cover casserole and leave soup to simmer slowly for 1 hour.
