Salmon Bisque
Servings: 6 [1 cup / 250 mL each]

  • 1/2 cup [125 mL] chopped celery
  • 1/4 cup [60 g] margarine
  • 1/4 cup [35 g] flour
  • 4 cups [1 L] milk
  • 1/2 cup [125 mL] salad dressing
  • 1 [7 3/4-ounce / 220-mL can] salmon, drained and crumbled
  • 2 tablespoons [30 mL] minced chives
  • 1/2 teaspoon [2.5 mL] salt
  • 1/4 teaspoon [1 mL] celery seeds
  • 1/8 teaspoon [0.5 mL] pepper
  • Melt chopped celery into melted margarine, until soft.
  • Stir in flour, then slowly stir in milk.
  • Stir until just thickened.
  • Stir in drained crumbled salmon, minced chives, salt, celery seeds and pepper.
  • Reheat and serve.
