- 3 peeled and seeded cucumbers, cubed
- 1 onion, diced
- 1 clove garlic
- Salt and pepper, to taste
- 1/2 cup [125 mL] consomme or chicken broth
- Freshly chopped parsley [to serve]
- Simmer together all ingredients, except chopped parsley, until soft.
- Puree into a blender, until really creamy.
- Serve, garnished with chopped parsley.
