Creamy Cucumber Soup

IngredientsPreparation
  • 3 peeled and seeded cucumbers, cubed
  • 1 onion, diced
  • 1 clove garlic
  • Salt and pepper, to taste
  • 1/2 cup [125 mL] consomme or chicken broth
  • Freshly chopped parsley [to serve]
  • Simmer together all ingredients, except chopped parsley, until soft.
  • Puree into a blender, until really creamy.
  • Serve, garnished with chopped parsley.
