- 1 cup [250 mL] peeled, chopped potatoes
- 1/4 cup [60 mL] chopped leek
- 1 1/2 cups [375 mL] chicken broth
- 1 cup [250 mL] boiled fresh or frozen green peas
- 1/4 cup [60 mL] chopped celery
- Salt and pepper, to taste
- 1 cup [250 mL] milk or cream
- Into a large casserole, mix together all ingredients, except milk or cream.
- Bring to a boil; simmer until vegetables are really soft.
- Slowly stir in milk or cream.
- Reheat and serve.
