Creamy Leek Soup

  • 1 cup [250 mL] peeled, chopped potatoes
  • 1/4 cup [60 mL] chopped leek
  • 1 1/2 cups [375 mL] chicken broth
  • 1 cup [250 mL] boiled fresh or frozen green peas
  • 1/4 cup [60 mL] chopped celery
  • Salt and pepper, to taste
  • 1 cup [250 mL] milk or cream
  • Into a large casserole, mix together all ingredients, except milk or cream.
  • Bring to a boil; simmer until vegetables are really soft.
  • Slowly stir in milk or cream.
  • Reheat and serve.
