Acadian-Style Oyster Soup

  • 3 tablespoons + 1 teaspoon [50 g] butter
  • 2 cups [500 mL] freshly shelled oysters
  • Juices from the oysters
  • 4 cups [1 L] milk
  • 1 1/2 teaspoons [7.5 mL] salt
  • Dash of pepper
  • Melt butter; add oysters, with juices.
  • Simmer for approximately 3 minutes.
  • Heat milk; slowly pour over oysters, stirring.
  • Salt and pepper.
  • Serve immediately.
