Turkey Broth Minestrone Soup

Comments: If desired, prepare a chicken broth replacing all turkey pieces with chicken pieces, or use chicken broth cubes or powder.
This soup can be frozen.

Turkey Broth
  • 2 pounds [1 kg] turkey parts such as legs, breast, wings or cooked turkey carcass pieces
  • 10 cups [2.5 L] cold water
  • 1 large onion
  • 3 cloves
  • 2 celery stalks with leaves, chopped
  • 2 carrots, chopped
  • 4 parsley sprigs
  • 1/2 teaspoon [2.5 mL] thyme
  • Salt and pepper, to taste
Minestrone Soup
  • 2 tablespoons [30 mL] olive oil
  • 1 large onion, chopped
  • 3 to 4 cloves garlic, minced
  • 4 carrots, peeled and diced
  • 2 large celery stalks with leaves, chopped
  • 8 cups [2 L] turkey broth
  • 1 [28-ounce / 796-mL] can plum tomatoes with juice, chopped
  • 1 1/2 teaspoons [7.5 mL] basil
  • 1 teaspoon [5 mL] oregano
  • 1 small zucchini, diced
  • 2 cups [500 mL] cooked turkey dices
  • 3/4 cup [190 mL] soup pasta noodles
  • 1 [19-ounce / 540-mL] can chickpeas or white beans, rinsed and drained
  • 1/3 cup [80 mL] freshly chopped parsley or basil
  • Salt and pepper, to taste
  • Freshly grated Parmesan cheese
Turkey Broth
  • Arrange turkey parts or carcass into a large casserole.
  • Cover with cold water.
  • Prick onion with cloves.
  • Add pricked onion, chopped celery and leaves, chopped carrots and parsley sprigs.
  • Season with thyme, salt and pepper, and bring to a boil.
  • Simmer slowly, covered, for 1 1/2 to 2 hours.
  • Strain through a fine sieve.
  • Remove meat from bones; add to broth.
Minestrone Soup
  • Into a large casserole, heat olive oil over medium heat.
  • Soften together chopped onion, minced garlic, carrot dices, and chopped celery for 5 minutes, stirring.
  • Pour in turkey broth; mix in chopped plum tomatoes with juice, basil and oregano.
  • Bring to a boil; lower heat and simmer, covered, for 20 minutes.
  • Mix in zucchini dices, cooked turkey dices and pasta noodles.
  • Simmer for 8 to 10 minutes more, until pasta is just tender.
  • Mix in drained chickpeas or white beans; just heat through.
  • Mix in chopped parsley or basil; salt and pepper.
  • Ladle soup into hot individual soup bowls; sprinkle with grated Parmesan cheese.
  • If soup thickens while standing, pour in more broth or water, if needed.
