Easy Cream of Broccoli Soup

  • 10 ounces [310 mL] frozen partially thawed broccoli, chopped
  • 1 1/2 cups [375 mL] milk
  • 1 cup [250 mL] light cream
  • 1 teaspoon [5 mL] dried onion flakes
  • 2 cubes beef broth conentrate
  • 1/4 teaspoon [1 mL] salt
  • 1 pinch pepper
  • Mix together chopped broccoli and 1/2 cup [125 mL] milk into a blender until broccoli is completely broken-up.
  • Pour in remaining milk and light cream; add onion flakes, beef broth cubes, salt and pepper.
  • Mix until smooth.
  • Reheat, and serve.
