Healthy Vegetable Soup

Comments: If you cannot find a low-calorie dry soup mix, you can sometimes find some in bulk, which will be labeled 'very low fat content'.
Freezes very well.
Servings: One large casserole
  • 2 [28-ounce / 796-mL each] cans tomatoes
  • 1 small cabbage, sliced
  • 6 carrots, sliced
  • 1 small zucchini, diced
  • 1/2 cauliflower, chopped
  • 1/2 celery stalk, diced
  • 1 large onion, minced
  • 4 envelopes low-calorie soup mix [flavor to taste]
  • Water
  • Salt and pepper, to taste
  • Pour tomatoes into a large casserole; crush tomatoes.
  • Mix in cabbage and carrot slices, zucchini dices, chopped cauliflower, celery dices and minced onion.
  • Sprinkle with dry soup mix.
  • Pour in enough water to completely cover the vegetables; mix well.
  • Cover and simmer for 3 hours.
  • Salt and pepper before serving.
