- 2 [28-ounce / 796-mL each] cans tomatoes
- 1 small cabbage, sliced
- 6 carrots, sliced
- 1 small zucchini, diced
- 1/2 cauliflower, chopped
- 1/2 celery stalk, diced
- 1 large onion, minced
- 4 envelopes low-calorie soup mix [flavor to taste]
- Salt and pepper, to taste
- Pour tomatoes into a large casserole; crush tomatoes.
- Mix in cabbage and carrot slices, zucchini dices, chopped cauliflower, celery dices and minced onion.
- Sprinkle with dry soup mix.
- Pour in enough water to completely cover the vegetables; mix well.
- Cover and simmer for 3 hours.
- Salt and pepper before serving.
