Creamy Cold Cantaloupe Soup

  • 1 cantaloupe
  • 1/4 cup [60 mL] orange juice
  • 1/2 cup [125 mL] sour cream or buttermilk
  • 1 teaspoon [5 mL] freshly chopped ginger
  • Half and seed cantaloupe.
  • Remove meat with a spoon.
  • Puree cantaloupe meat into a blender or a food processor.
  • Pour into a serving bowl.
  • Stir in orange juice, sour cream or buttermilk and chopped ginger.
  • Mix well.
  • Cover and refrigerate for at least 4 hours.
  • Serve, really cold.
