Polynesian-Style Cold Raw Fish Soup

  • 2 pounds [1 kg] fresh tuna fish
  • 8 green lemons [limes]
  • Salt and pepper
  • 2 tomatoes, cut into 3/4-inch [2-cm] cubes
  • 1 carrot, sliced
  • 1 onion, finely chopped
  • 1 cucumber, diced
  • 1 garlic clove, minced [or to taste]
  • 1 1/2 cups [375 mL] coconut milk, fresh* or canned
  • 3 hard-boiled eggs, sliced [optional]
  • 1 bunch freshly chopped parsley or coriander
  • Soda crackers
*Fresh Coconut Milk
  • 1 small coconut
  • 2 cups [500 mL] water
  • Cut tuna fish into 1/3 x 3/4-inch [8-mm x 2-cm] pieces.
  • Soak tuna fish cubes into salted water for 15 minutes, then for 10 minutes into lemon juice or until fish is very white.
  • Pepper to taste; salt if needed.
  • Mix in tomato cubes, carrot slices, chopped onion, cucumber dices, minced garlic and coconut milk.
  • Refrigerate for 10 minutes.
  • If desired, decorate with hard-boiled egg slices.
  • Sprinkle with chopped parsley or coriander and serve, along with soda crackers.
*Fresh Coconut Milk
  • Finely grate coconut meat.
  • Soak in 2 cups [500 mL] water for 10 minutes and remove milk using a cheese cloth.
