Pea Soup with Salt Pork or Shortening

  • 1 pound [454 g] dried whole yellow peas
  • 1/2 pound [227 g] salt pork
    or
    1/4 pound [113 g] shortening
  • 10 1/2 cups [2.625 L] water
  • 2 medium onions, chopped
  • 2 carrots, finely chopped
  • 2 bay leaves
  • 1 celery stalk, with leaves
  • Freshly chopped parsley, to taste
  • 1 teaspoon [5 mL] savory
  • Salt and pepper, to taste
  • Rinse and drain peas.
  • Transfer all ingredients, except salt and pepper, into a large casserole.
  • Bring to a boil and leave to simmer for 2 1/2 to 3 hours, until peas are done.
  • Salt and pepper soup.
  • Remove bay leaves and celery stalk before serving.
