Cold Cucumber Soup

Comments: Ideal and refreshing recipe for hot days!
  • 1 cucumber
  • 1 L [4 cups] stirred plain yogurt
  • Salt, to taste
  • 5-grain pepper, to taste
  • 1 goat cheese matured into wood ashes
  • Chopped chives, to taste
  • Peel cucumber.
  • Thinly chop into a food processor or grate cucumber.
  • Transfer into a deep bowl.
  • Mix in yogurt, salt and pepper.
  • Mix in goat cheese.
  • Sprinkle mixture with chopped chives.
  • Refrigerate for 30 minutes, before serving.
