Broad Bean Pea Soup

Comments: I got this recipe in 1995 from the wife of a farmer who operates a stall at the Atwater Market in Montreal, Quebec, Canada.
Quite nourishing.

  • 8 cups [2 L] beef broth or water
  • 1 onion, minced
  • 1 cup [250 mL] chopped cabbage
  • 2 carrots, diced
  • 1 celery stalk, diced
  • Salt and pepper, to taste
  • Savory, to taste
  • Parsley, to taste
  • Fine herbs, to taste
  • 1 small piece salt pork
  • 2 cups [500 mL] broad beans
  • 1/2 cup [125 mL] barley
  • Bring together all the ingredients, except broad beans and barley, to a boil.
  • Stir in broad beans and barley.
  • Leave to simmer slowly for 2 to 3 hours before serving.
