Basic Potato Pancakes
Comments: Here is a basic potato pancake recipe; you can add any desired food pieces, such as cooked vegetable pieces..., to this dough before frying it.
Serve these pancakes as you would potatoes, along with any dish.
Note: if you do not a have a blender, you must grated the potatoes before adding them to remaining ingredients.
If desired, cut any remaining pancake into strips [reserve refrigerated], to be reheated at breakfast. Reheat pancake strips into a frypan; when hot, pour some beaten eggs over pancake strips and cook until eggs are done, and serve.
  • 3 medium-size potatoes, peeled
  • 2 eggs, beaten
  • 1/3 cup [45 g] flour
  • 1 teaspoon [5 mL] salt
  • 1/8 teaspoon [0.5 mL] pepper
  • 1/2 teaspoon [2.5 mL] baking powder
  • 3 tablespoons [45 mL] milk
  • 2 tablespoons [30 mL] fat [roast cooking fat if possible]
  • Cut peeled potatoes into pieces; transfer into a blender.
  • Add beaten eggs, flour, salt, pepper, baking powder, milk and fat.
  • Blend until light.
  • Drop spoonfuls of dough onto a really hot pancake fryer.
  • Brown pancake on both sides, lowering fryer temperature if needed.
  • Repeat with remaining dough.
