Restaurant-Style Waffles

  • 8 egg yolks
  • 6 cups [1.5 L] milk
  • 6 cups [840 g] flour
  • 1 tablespoon [15 mL] salt
  • 3 tablespoons [45 mL] baking powder
  • 1 1/2 cups [375 mL] oil
  • 1 tablespoon [15 mL] vanilla
  • 8 egg whites, beaten until firm
  • Maple syrup
  • In a large bowl, beat egg yolks; mix in milk, flour, salt and baking powder.
  • Pour in oil and vanilla.
  • With a spatula, fold in beaten egg whites.
  • Cook waffles in a hot waffle iron.
  • Serve with maple syrup.
