- 8 pancakes
- 3 cups [750 mL] strawberry sherbet
- Strawberry coulis
- Mixture of red berries, to taste
- Crushed mint
- Prepare pancakes; keep warm.
- Using an ice cream scoop, mold 16 balls strawberry sherbet.
- Reserve balls, frozen.
- Just before serving, spoon coulis all over each pancake.
- Fold pancakes in two, then in three.
- Arrange folded pancakes onto individual plates, along with sherbet balls.
- Top all over with red berries mixture.
- Sprinkle with mint and serve.
