Pancakes, Red Fruits and Sherbet

Comments: To keep pancakes warm, layer cooked pancakes onto a plate, over hot, simmering water, over low heat.

  • 8 pancakes
  • 3 cups [750 mL] strawberry sherbet
  • Strawberry coulis
  • Mixture of red berries, to taste
  • Crushed mint
  • Prepare pancakes; keep warm.
  • Using an ice cream scoop, mold 16 balls strawberry sherbet.
  • Reserve balls, frozen.
  • Just before serving, spoon coulis all over each pancake.
  • Fold pancakes in two, then in three.
  • Arrange folded pancakes onto individual plates, along with sherbet balls.
  • Top all over with red berries mixture.
  • Sprinkle with mint and serve.
