Dessert Cheese Pancakes

Comments: Ricotta cheese mixture is also excellent, into waffles.

  • 1 cup [140 g] flour
  • 3 eggs
  • 1 cup [250 mL] milk
  • Salt
  • 1 3/4 pounds [795 g] ricotta cheese
  • Cinnamon, to taste
  • 1 cup [250 mL] icing sugar
  • Butter
  • Maple syrup [optional]
  • Beat together flour, eggs and milk; add a little salt.
  • Beat until smooth; set aside.
  • Into a clean bowl, mix together ricotta cheese, cinnamon and icing sugar.
  • Cook pancakes into a lightly buttered frypan.
  • Spread ricotta cheese mixture between cooked pancakes.
  • If desired, serve along with maple syrup.
